Globulins are plasma proteins mostly synthesized by liver and lymphatic tissues. They fall into α-globulins (antiprotease / protease globulins), β-globulins (carrier globulins) and γ-globulin (immuno globulins). More in particular, an immuno globulin is a serum glycoprotein with an Y-shaped quaternary structure, secreted by activated plasma cells in response to a foreign macromolecule. This book discusses the role of immunoglobulins in monoclonal gammopathies; the role of immunoglobulins in anaphylaxis; the biochemical characteristics, and nutraceutical and technological uses of amaranth globulins; and seed storage globulins.
