Vegetable consumption is important for a variety of health reasons, yet intakes are typically lower than recommended. In Chapter One, the bibliographic evidence to research on the relationship between the consumption of fruits and vegetables and the risk of cancer of the digestive tract is discussed. In Chapter Two, the recent control activity carried out by the Italian National Reference Center for the Detection of Radioactivity in Feed and Foodstuff, relating to the determination of 90Sr in foods of plant origin, is reported. Chapter Three details the interventions currently available that focus specifically on improving vegetable intakes.
