Molecular detection is arguably one of the fastest growing areas in current laboratory-based food pathogen screening and identification. Chapter One discusses how growth of the so called ‘omics’ technologies has, over the last decade, led to a gradual migration away from the ‘one test, one pathogen’ paradigm, toward multiplex approaches to foodborne pathogen detection and identification, which have led to significant improvements in food safety. Chapter Two covers the antimicrobial potential of metals against foodborne pathogens, including bacteria, viruses, and molds as well as the mechanism(s) behind their antimicrobial effect. Chapter Three links various challenges in food processing companies – from legislative to company specific – to the poor adoption of acknowledged quality assurance standards and guidelines, improvement and assessment of FSMS in developing countries. In Chapter Four, the authors demonstrate that there exist conspicuous cohort effects in favor of the older generations, born before the high economic growth started in 1960, in at-home consumption of fresh fish in Japan and that even the older segments of the population, such as those who will be above their 50s in 2025, are predicted to eat substantially less fish than in the past.
